A Mexican casserole is a spicy version of the familiar combination dish. While it typically contains beef, cheese and sour cream, a healthy version can be made without losing the taste. Add this to my Recipe Box.
Instructions

Crush the Tostitos chips until you get about 1 1/2 cups worth and put them in the bottom of a baking dish.
2Brown the ground beef and drain the grease.
3Mix the beef, salsa and chili beans and spread over the chips.
4Spread the sour cream over the top of the mixture and it off with the diced tomatoes, black olives and cheese.
5Bake uncovered at 350 degrees for 30 minutes, or until the cheese is dark and beginning to bubble. Serve hot.
